Beef Jerky Pasta Salad
This unique pasta salad combines the savory flavors of beef jerky with fresh vegetables and a creamy ranch dressing.
It's a hearty and satisfying dish that's perfect for picnics, potlucks, or as a side dish for any occasion.
Ingredients:
- 1 cup chopped Traditional Roasted Garlic Beef Jerky
- 8 ounces rotini pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup black olives, sliced
- 1/4 cup green bell pepper, diced
- 1/4 cup cheddar cheese, cubed
- 1/4 cup ranch dressing
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Cook the rotini pasta according to the package instructions until it's al dente. Drain and rinse with cold water to stop the cooking process. Allow it to cool completely.
- In a large mixing bowl, combine the cooked pasta, chopped beef jerky, cherry tomatoes, cucumber, red onion, black olives, green bell pepper, and cheddar cheese.
- In a separate small bowl, whisk together the ranch dressing, mayonnaise, Dijon mustard, and apple cider vinegar until well combined. Season with salt and pepper to taste.
- Pour the dressing over the pasta salad and toss everything together until the salad is evenly coated with the dressing.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld.
- Before serving, give the pasta salad a final toss to make sure everything is well mixed. You can garnish it with fresh parsley if you like.
