Ingredients:

  • 3oz bag of Traditional Prime Rib Jerky, chopped
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups beef broth
  • Salt and pepper, to taste
  • Shredded cheddar cheese and chopped fresh cilantro, for garnish

Instructions:​​​​​​​

  1. Heat the olive oil in a large pot over medium heat. Add the onion, green and red bell peppers, and garlic.
    Cook until the vegetables are tender, about 5 minutes.
  2. Add the chili powder, cumin, smoked paprika, and cayenne pepper.
    Cook for 1 minute, stirring constantly.
  3. Add the diced tomatoes, kidney beans, black beans, and beef broth.
    Bring the mixture to a boil and then reduce heat to low.
    Simmer for 20-30 minutes, stirring occasionally.
  4. Add the chopped beef jerky and stir to combine.
    ​​​​​​​Simmer for an additional 10-15 minutes.
  5. Season with salt and pepper to taste.
  6. Serve the chili hot, garnished with shredded cheddar cheese and chopped fresh cilantro.
